  • 14 cups shaved ice
  • 2¼ cup sweetened red beans (monggo)
  • 3¼ cup sweetened white beans (kabayo)
  • 4¼ cup sweetened jackfruit (langka), sliced
  • 5¼ cup sweetened plantain (saging na saba), sliced
  • 6¼ cup coconut sport (macapuno)
  • 7¼ cup nata de coco (coconut jelly)
  • 8¼ cup kaong (sugar palm fruit)
  • 92 slices leche flan
  • 102 scoops ube (purple yam) ice cream
  • 11½ cup evaporated milk
  • 122 tbsp ube halaya (purple yam jam)
  • 13Pinipig (toasted rice flakes), for topping

Step by Step

How to Cook

    Prepare all toppings in advance. Sweetened beans and fruits can be made from scratch or sourced from a Filipino grocery store.

    In a tall glass, layer the sweetened beans, jackfruit, plantain, macapuno, nata de coco, and kaong.

    Pack shaved ice generously on top of the toppings, mounding it high above the glass.

    Drizzle evaporated milk over the shaved ice.

    Place a slice of leche flan on top of the ice.

  6. 6

    Add a scoop of ube ice cream and a spoonful of ube halaya.

    Sprinkle pinipig on top for crunch.

    Serve immediately with a long spoon. Mix everything together before eating — that is the halo-halo way.
